The only things that actually toggle are the following: Primary Weapon Grips (Secondary points are hold-only), and every inventory item (basically anything grabbable, if not, it's a bug and please report!)
Doors, drawers, and other interactables will continue to be Hold Grip style.

I'd like to reinforce a few points.
This is Early Access, please expect bugs.ːsteamsadː If you do not like bugs, please do not purchase this game until Full Release. ːsteamsaltyː
The current demo was polished over a period of 6 months before its release. I have NOT updated the demo with all the new updates over these past few months. After all these game-breakers are fixed, I plan on updating the demo. The current build of the game (EA Release) is 6 months work of redoing A LOT of systems, which is why you are NOT seeing the level of polish as in the demo currently.
Please read the tooltips I have provided for you in the very first map you load into BEFORE starting your journey in the game. Eventually I will create some tutorial system + other UX things to help ease new players into the game.
I have just taken over the Save/Load systemːsteamhappyː, and most likely will start from scratch. In this case there will DEFINITELY be a wipe in all save progress. I do humbly apologize for this ahead of time. Even then, your saves may get wiped during EAːsteamsadː. This is NOT a bug. Please do not report it. It's not really intentional either, but it's just the way things are. I will try my best NOT to wipe progress, but in these early stage you should expect it.ːsteamsadː
If you have written a review (negative or positive) and at anytime during these patches (and eventually content updates), the issues you had are fixed, please consider updating your reviewsːsteammockingː. This is important so everyone understands the current state of the game, not the launch trainwreck that some (most?) experienced.ːsteamhappyː

The Morning After...

Well, you know what? Who cares? Yesterday is yesterday, it's over and past. Nothing we can do about it anymore. Now is the time to act and show everyone that what was put out yesterday was not what we had wanted to put out and that we are committed to blasting all Virtual Reality games out of the water with our visual fidelity, story-telling, and fun-factor.ːsteamhappyː
I just want to remind you all, that we are in Early Access and there will be bugs. I cannot and will not promise you a bug-free experience ever. We are fully committed to fixing all game-breaking bugs this weekend as well as making sure that any future bugs introduced have very minimal impact to your gameplay experience. Of course, if I can make it bug/glitch-free prior to any update release, it will happen.

What does this mean?
First off, I was trying to allow varying speeds with Smooth Turn, but failed and it broke completely and I never use it (because it makes me sick) and forgot to check. But anyway, I tested and it's back to normal without the ability to change speeds.
Toggle Grip has always been an issue with usːsteamsadː. The fact is, toggle gripping makes sense only for certain items. But sometimes it interferes with other things that you would normally feel more appropriate as "hold grip"
As such, Toggle Grip, in its current implementation is a buggy mess. I am going to be working on it this weekend and pretty much starting from scratch to make it an "Hybrid Grip", where it will only Toggle Grip for certain items (like weapons), while interactions like opening/closing doors/drawers and other things will use Hold Grip. ːsteamhappyːːsteammockingː
I think for now this will make things much easier in the long run and feel much better overall. ːsteamhappyː

Early Access Launched!

We'll be updating and adding new content in the game over the weekend and beyond. We will be listening and learning from your valuable feedback through the first campaign mission: Outbreak, as well as through the multiplayer PvP mode: Hunted.
With this feedback we hope to be able to appease as many players as possible while still keeping it close to the original vision of the game.
From now on, I'll be releasing proper patch notes. Good luck and have fun! And remember, it's Early Access, not Full Release!
